Daily Par-Based Prep Sheet

A fill-in daily prep sheet that turns a par level, a count on hand, and a recipe yield into the number of batches each station should run today.

This is the sheet a lead fills out before the prep shift. One row per prepped item, grouped by station, with the same seven columns every day so the team never has to guess where the number came from. Today's par is the base par after any day-of-week adjustment. Need is today's par minus what was counted on hand and still within hold time. Batches to run is need divided by the recipe yield per batch, rounded up unless you have decided to accept a small shortfall on that item.

The first two rows show how a finished row reads; the numbers are illustrations, not recommendations, so replace them with your own. Keep the completed sheets. A stack of them is the prep history that tells you which pars are too high, which are too low, and which items keep getting skipped.
