Start with a real par
A par is the amount of each prepped item you want on hand to get through the day. Setting it honestly is the foundation of the whole list.
Base it on how much you actually use on a normal day, not a comfortable overstock that ends in the trash.
Count what is already there
The list is the gap between par and on hand, so a quick morning count is required. Skip the count and the math is just a guess.
Counting the same way each day, by station or shelf, makes the number reliable and fast to gather.
Convert to batch sizes
A par in portions has to become a batch in pans, quarts, or pounds. Recipe yields do that conversion for you.
With yields attached, the list tells the cook exactly how much to make, not just that something is low.
Refine over time
The first pars are a starting point, and prep history shows where you ran short or long. Adjust weekly and the list gets tighter.
Over a month, tuned pars cut both the eighty-sixes and the close-of-night waste at the same time.
- Set pars from real daily usage
- Count on hand every morning
- Convert pars to batch sizes with yields
- Tune pars using prep history
